Do I prefer pork chops over pork belly as a main ingredient for pork adobo? Nope! Pork belly is still the best protein for the adobo. But this is a good alternative if you’re tired of the usual fried pork chops.

Adobo Pork Chops
Ingredients
- 3 tbsp olive oil
- 1 kilo pork chops
- 6 cloves garlic minced
- 2 tsp whole peppercorns
- 5 pieces bay leaves
- 1 cup water
- 4 tbsp soy sauce
- 3 tbsp cane vinegar
- salt to taste
Instructions

In a wok, heat olive oil in medium heat.

Add pork chops and pan-fry each side for 5 minutes.

Add garlic, peppercorns and bay leaves. Cook for 3 minutes.

Add water and soy sauce. Bring to a boil.

Cover wok and let the mixture simmer for 45 minutes. Add water as needed.

Uncover pan. Add vinegar and let the mixture boil. Stir while continuing to cook for 10 minutes.

Add salt.

Serve and enjoy!
