Ampalaya with Egg and Shrimps

Awwww… Ampalaya, my favorite veggie! I got to share a couple of ampalaya dishes already but I haven’t shared one cooked with shrimps. So today, my featured recipe is Ampalaya with Egg and Shrimps.

Ampalaya with Egg and Shrimps

It’s cooked the same way as Ampalaya Guisado with Egg and Ground Pork. And it’ll be ready in 15 minutes. Quick, easy but oh so good! 😃

Ampalaya with Egg and Shrimps

Course Main Course
Servings 3 people

Ingredients

  • 1 piece ampalaya sliced into thin pieces
  • 10 pieces shrimps
  • 2 pieces eggs beaten
  • 1 piece tomato cubed
  • 1 piece onion sliced
  • 4 cloves garlic chopped
  • 3 tbsp olive oil
  • salt to taste
  • pepper to taste

Instructions

  1. Rinse ampalaya with water

  2. Heat olive oil in a wok

  3. Add garlic and saute for a few minutes.

  4. Add onion and tomato. Saute until tomato juices come out.

  5. Add shrimps.  Cook for 2 minutes.

  6. Add ampalaya and cook for another 5 minutes.

  7. Add salt & pepper to taste.

  8. Set aside ingredients on one side of the wok.  Add beaten eggs on the other side and cook the eggs.

  9. Mix the cooked eggs with the rest of the ingredients in the wok. Cook for another minute.

  10. Serve and enjoy!
