In the Philippines, Adobo is pretty popular. We usually do it with chicken and pork but this time, I tried it with a vegetable, Box Choy. Thus, this dish is called Bok Choy Adobo. It has the same style of cooking, only the main ingredient is different. I guess Adobo works for every type of protein!
To make Bok Choy Adobo appetizing, it’s a must to have crunchy garlic ready to top with the finished dish. The garlic elevates the look of the Bok Choy Adobo and it’ll make the diners want to dig in.
Bok Choy Adobo
Ingredients
- 2 tbsp olive oil
- 4 cloves garlic minced
- 3 pieces bay leaves
- 1/2 kilo bok choy chopped
- 3 tbsp soy sauce
- 2 tbsp white vinegar
- salt to taste
- pepper to taste
- 1/2 tsp sugar
- crunchy garlic for garnishing
Instructions

In a wok, heat oil over medium heat.

Add garlic and bay leaves. Cook for 2 minutes.

Add bok choy and cook for another 3 minutes.

Add soy sauce and vinegar. Let boil.

Cover the wok and let the dish simmer for 5 minutes.

Add salt, pepper and sugar. Stir and cook the ingredients together for another 1 minute.

Serve and enjoy!
