Filipino Shrimp Curry

If there is one dish I’m super proud of cooking, that is the Filipino Shrimp Curry. This recipe that I adapted from Panlasang Pinoy is the bomb! It’s legit curry, tasted like it came from an Indian restaurant!

I will make sure to cook this if I’ll have friends around. It’s difficult to experiment if we’re feeding other people, haha!

Filipino Shrimp Curry

Ingredients

Marinade

  • 1/2 kilo shrimps shell removed
  • 2 pieces calamansi
  • 1/4 tsp ground pepper
  • 1/2 tsp cayenne pepper powder

For Cooking

  • 3 tbsp olive oil
  • 1 piece onion minced
  • 4 cloves garlic minced
  • 1 piece thumb-sized ginger minced
  • 1 piece tomato
  • 2 cups coconut milk
  • 1 tbsp curry powder
  • 1 piece Knorr Shrimp Cube
  • 1/2 tsp turmeric powder
  • 1 piece red bell pepper chopped
  • 1 piece green bell pepper chopped
  • 2 tbsp fish sauce
  • 1/4 cup parsley chopped

Instructions

  1. Put Shrimps in a bowl. Add calamansi juice, pepper and cayenne pepper powder. Mix ingredients and marinade for 15 minutes.

  2. Heat oil in a wok.

  3. Add onions and saute for 1 minute.

  4. Add garlic, ginger and tomato and saute for another minute.

  5. Add coconut milk. Stir then let boil. Cover the pot and continue to cook for 2 minutes.

  6. Add curry powder and stir with the rest of the ingredients.

  7. Add shrimp cube and stir again and cook for another 2 minutes.

  8. Add turmeric powder and bell peppers. Stir with the rest of ingredients.

  9. Cover pot and cook for another 3 minutes.

  10. Add marinated shrimp into the pot and cook for another 5 minutes.

  11. Add fish sauce and parsley.  Cook for another 2 minutes.

  12. Serve and enjoy!
