Pork Adobo is considered the Philippines’ country dish. So it’s a go-to-dish for all Filipinos. But do you know that you can use your pork adobo leftover to create another yummy dish? I tried it and Pork Adobo Paksiw is a winner! The lechon sauce added to the usual adobo sauce, the combination of those flavors are actually pretty good!
I didn’t use leftover adobo for this recipe though. I just wanted to try something new so I made this from scratch. Of course, adapting a recipe online and tweaking it to my taste. This Pork Adobo Paksiw is a good dish to add to our favorites.
Pork Adobo Paksiw
Ingredients
- 1 tbsp olive oil
- 5 cloves garlic minced
- 1/2 tsp black pepper
- 1/2 kilo pork liempo cut into small cubes
- 1 piece bay leaf
- 1/4 cup vinegar
- 1/8 cup soy sauce
- 1/2 tsp brown sugar
- 1/2 cup lechon sauce
- 1/4 cup water
Instructions

In a wok, heat oil over medium heat.

Add garlic and black pepper. Saute for 1 minute.

Add pork and cook until pork turns light brown in color.

Add bay leaf, vinegar, soy sauce, sugar and lechon sauce. Simmer for 15 minutes.

Add water and mix all ingredients. Simmer for another 10 minutes.

Serve and enjoy!
