This is one of the two favorite peanut recipes around. I just love the filipino version of cooking peanuts. It’s super yummy and a bit deadly, hehehe! I love my peanuts with lotsa crispy garlic and salt. You might be put off with the salt that I put in. This is just me though. The amount of salt to put in Adobong Mani is based on who’s going to eat it.
This Adobong Mani is easy to cook as well. Then we can just store it in a air-tight container and there’s a ready snack for you. I remember very well how I used to buy from manong every single day when I was in elementary and high school. It’s one of my many guilty pleasures in life 😃
- 5 tbsp olive oil
- 500 grams raw peanuts
- 1 whole garlic separate into cloves and mash
- salt to taste
In a wok, heat oil over medium heat.
Add garlic and fry until golden brown in color and crispy. Remove garlic from wok and set aside.
In the same wok, using the remaining oil, lower heat then add peanuts.
Cook for 20 minutes while stirring occasionally.
Once peanuts are cooked, put in a serving bowl.
Add salt to taste and enjoy snacking!
