Since there are so many variants of Adobo, then Bicol Express definitely has some too! So today, it’s Chicken Bicol Express! A Bicol Express will not be a genuine one if we don’t put tons of chili! So put as much chili that you believe you can partake! The spicier, the better! 🌶
I liked the dish I prepared but I have hoped that I put in more chili. Nevertheless, still a success! You should try this dish too if you prefer chicken over pork. Here is the Chicken Bicol Express recipe.
Chicken Bicol Express
Ingredients
- 1 tbsp olive oil
- 1 piece onion minced
- 4 cloves garlic minced
- 1 tbsp Barrio Fiesta Bagoong Sauce
- 1 kilo boneless chicken thigh cut into cubes
- 400 grams coconut cream
- 15 pieces thai chili peppers minced
- salt to taste
- pepper to taste
Instructions

In a wok, heat oil over medium heat.

Add onions and garlic. Cook until onions is translucent in color.

Add Bagoong/Shrimp paste and cook for another 2 minutes.

Add chicken and cook until color turns light brown.

Add coconut cream and thai chili peppers. Mix ingredients while cooking.

Bring to a simmer for about 30 minutes.

Add salt and pepper. Mix again and cook for another minute.

Serve and enjoy!
