While I was looking for more recipes with sotanghon, I found the Beef Amapalaya with Sotanghon recipe. It didn’t look normal but I tried it out anyway.
This Beef Ampalaya with Sotanghon Soup is okay but not gonna be in my favorite recipe list. I’m just not a fan of tomato-based soups but if you do, give this one a try!
Beef Ampalaya with Sotanghon
Ingredients
ampalaya
- 250 Grams ampalaya sliced thinly
- 1/4 Tsp salt
- 1.5 Cups water
Dish
- 2 Tbsp olive oil
- 5 Cloves garlic minced
- 1/2 Piece onion sliced
- 200 Grams sirloin beef cut into strips
- 1 Piece beef cube
- 200 Grams tomato sauce
- 1 Tsp White sugar
- 1/2 Tsp salt
- 2.5 Cups water
- 50 Grams sotanghon
Instructions

In a bowl, soak ampalaya in salt and water for 8 minutes.

Drain ampalaya and set aside.

In a wok, heat oil over medium heat.

Add garlic, onion and beef. Sauté for a few minutes

Add beef cube, tomato sauce, sugar, salt and water.

Boil then lower heat. Put ingredients to simmer for 10 minutes.

Add sotanghon and cook for another 3 minutes.

Put ampalaya and gently stir with rest of ingredients.

Cook for 3 more minutes before serving.
