Mix all sweet and sour sauce ingredients then set aside.
In a wok, place oil over medium heat.
Add tofu and cook until golden brown in color. Set aside.
In the same wok, add garlic, white portion of the green onions and ginger. Cook for 1 minute.
Add sweet and sour sauce and cook until boiling.
Add cooked tofu and continue to cook until sauce is well blended into the tofu cubes.
Sprinkle the green portion of the green onions on top of the dish and serve.
