In a wok, heat oil over medium heat.
Add tofu and cook until crisp. Remove from wok and set aside.
With the remaining oil, add onions and garlic. Saute until onions are soft.
Add carrots and cook for another minute.
Add tofu and mung bean sprouts and cook for another 2 minutes.
Season with salt & pepper. Carefully mix ingredients together.
Serve hot and enjoy!
