Bulalo Beef Pares

When I was still residing in Quezon City, I would go to La Loma as frequent as I can to eat Pares.  That time, I still didn’t know how to cook (yes, even a decent sunny-side up egg). Now, that I am able to cook, I figured it’s time for me to learn one of my favorite dishes but then I saw a recipe online that has a twist to it.  Introducing Bulalo Beef Pares.  It’s amazing!  I get to eat a combination of my 2 favorite dishes, the pares and the bulalo.  The result is definitely yummy!  It’s a bit of a work but it was all worth it!

It was also my first time to try out the pressure cooker at home.  I had a bit of a mess as I was trying to take the pressure out of the cooker.  Anyhow, it was an experience but I’m learning!  This Bulalo Beef Pares is good and I’m just glad that I finally was able to replicate one of my favorite dishes.

Bulalo Beef Pares

Servings 4 people

Ingredients

for Boiling

  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 6 cups water
  • 1 piece yellow onion wedged
  • 1.5 kilos beef shank

for Sauteeing

  • 1 piece yellow onion
  • 4 cloves garlic crushed
  • 1 piece thumb-sized ginger minced
  • 4 tbsp brown sugar
  • 5 pieces star anise
  • 3 tbsp cooking oil
  • 4 tbsp soy sauce
  • 3 cups garlic fried rice

Instructions

  1. Put water into pressure cooker.  Let boil.

  2. Add onions, black pepper and salt.

  3. Add beef shank. Cover and pressure cook for 30 minutes.

  4. In a clean big post, heat oil.

  5. Saute garlic, onions and ginger.

  6. Add the boiled beef shank.  Cook for 2 minutes.

  7. Add soy sauce and 1 3/4 cups of beef stock (from the boiled beef) into the pot. Let boil.

  8. Cover and cook for 8 minutes.

  9. Add star anise. Cook for another 12 minutes then remove star anise from pot.

  10. Add brown sugar and stir.  Cook for another 5 minutes.

  11. Add salt & pepper to taste.

  12. Transfer to a serving bowl.

  13. Serve with garlic fried rice & soup (from the boiled beef).
