Pork Menudo with Ham
Ingredients
- 3 Tbsp vegetable oil
- 6 Cloves garlic chopped
- 1 Piece onion chopped
- 200 Grams pork belly chopped into cubes
- 250 Grams ham chopped into cubes
- 200 Grams tomato sauce
- 1.5 Cups beef broth
- 2 Tbsp raisins
- 1 Piece potato chopped into cubes
- 1 Piece carrot chopped into cubes
- 1 Piece green bell pepper chopped into cubes
- 1 Piece red bell pepper chopped into cubes
- salt to taste
- pepper to taste
Instructions

In a wok, heat oil over medium-high heat.

Add garlic and onions. Saute until onions are soft.

Add pork belly. Cook until pork is light brown in color.

Add ham and cook for another 2 minutes.

Add tomato sauce and beef broth. Stir all ingredients. Let boil.

Add raisins. Lower heat to medium. Continue to cook until pork is tender, about 8 minutes.

Add potato, carrot and bell peppers. Cook for another 8 minutes.

Add salt and pepper to taste. Cook for another 2 minutes. Make sure to combine all ingredients.
