Tomato and Egg Stir-Fry

One of the most notable easy Chinese dishes is the Tomato and Egg Stir-Fry. I even saw this dish being cooked in the Family Cooking Showdown show. There’s always tomato and eggs in the fridge so this is easy to whip up.

The key to cooking this tomato and egg stir-fry is not to overcook them. Else, it won’t be delicious as we intended it to be. This one, luckily, I was able to cook nicely! So I enjoyed eating this dish.

Tomato and Egg Stir-Fry

Ingredients

  • 2 pieces eggs
  • 1/4 tsp salt
  • 2 tbsp olive oil
  • 2 stalks green onions chopped
  • 2 pieces tomatoes sliced into wedges
  • 1 tsp soy sauce
  • 1/2 tsp ketchup
  • 1/4 tsp salt
  • sesame oil to drizzle

Instructions

  1. In a small bowl, beat eggs with salt. Set aside.

  2. In a wok, heat oil over medium heat.

  3. Add beaten egg and cook for a few minutes. Remove egg from wok and set aside.

  4. Add more oil and cook half of green onions.

  5. Add tomatoes, soy sauce, ketchup and salt. Cook all together until tomatoes are soft.

  6. Add egg and mix ingredients together.

  7. Turn off heat. Put dish into a serving plate and sprinkle green onions on top and drizzle sesame oil.
