Whenever I feel lazy, I either get a canned tuna or a canned corned beef. This is one of these days. So I whipped up a very quick Stir-Fried Corned Beef. Super easy to cook but super yummy as well and filling!
The Stir-Fried Corned Beef is usually eaten during breakfast. I don’t really distinguish between breakfast, lunch or dinner though as I eat rice for all of those meals. And Corned Beef is perfect with rice! The potato is a great addition to this dish.
Stir-Fried Corned Beef
Ingredients
- 3 tbsp olive oil
- 1 piece potato chopped into cubes
- 5 cloves garlic minced
- 1 piece onion sliced
- salt to taste
Instructions

In a wok, heat oil over medium heat.

Add potatoes and cook for about 8 minutes. Set aside.

Using the same wok, add garlic and saute until aromatic.

Add corned beef and the potatoes from earlier to the wok.

Let it simmer for 3 minutes.

Add onions and cook for about 5 minutes. Season with salt as needed.
