I brought so much vegetables one day that I needed to cook them immediately before I couldn’t use them. Also, I had no space in the refrigerator. So first up, Chicken with Ampalaya in Oyster Sauce. If you’ve been reading here, you’d know that ampalaya is my absolute favorite vegetable so trying out this recipe.
And alas, it’s soooo good too! Apparently, chicken and the bittermelon goes well together. I cut the ampalaya a lil bigger than usual since it needs to match the size of the chicken slices.
Chicken with Ampalaya in Oyster Sauce
Ingredients
- 2 Tbsp oil
- 1 Piece yellow onion sliced
- 6 Cloves garlic minced
- 500 Grams breast fillet sliced
- 3 Tbsp oyster sauce
- 1/2 Cup water
- 2 Pieces ampalaya sliced
- salt to taste
- pepper to taste
Instructions

In a wok, heat oil over medium-high heat.

Add onions & garlic. Saute until onions are cooked.

Add chicken and cook for around 3-5 minutes until chicken color turns light brown.

Add oyster sauce, mix and cook for another 2 minutes

Add water and let boil. Cover for 12 minutes

Add ampalaya and cook for another 3 minutes.

Add salt & pepper. Ensure that all ingredients are incorporated. Serve and enjoy!
