Pork Menudo with Ham

Cooked Pork Menudo with Ham for lunch today… This one has a combination of pork belly and ham with the usual ingredients for menudo. I love how tasty and filling this dish is!

And the Pork Menudo with Ham is easy to cook too! all we need is to just cook the pork belly first, then the ham and then the sauce and finally the veggies and spices. This recipe serves 4 but if you have a big family, you can adjust the amount of ingredients to use. Considering holiday season just ended, I’m sure you till have lots of ham left, so this is a recipe you can consider 😊

Pork Menudo with Ham

Servings 4 People

Ingredients

  • 3 Tbsp vegetable oil
  • 6 Cloves garlic chopped
  • 1 Piece onion chopped
  • 200 Grams pork belly chopped into cubes
  • 250 Grams ham chopped into cubes
  • 200 Grams tomato sauce
  • 1.5 Cups beef broth
  • 2 Tbsp raisins
  • 1 Piece potato chopped into cubes
  • 1 Piece carrot chopped into cubes
  • 1 Piece green bell pepper chopped into cubes
  • 1 Piece red bell pepper chopped into cubes
  • salt to taste
  • pepper to taste

Instructions

  1. In a wok, heat oil over medium-high heat.

  2. Add garlic and onions. Saute until onions are soft.

  3. Add pork belly. Cook until pork is light brown in color.

  4. Add ham and cook for another 2 minutes.

  5. Add tomato sauce and beef broth. Stir all ingredients. Let boil.

  6. Add raisins. Lower heat to medium. Continue to cook until pork is tender, about 8 minutes.

  7. Add potato, carrot and bell peppers. Cook for another 8 minutes.

  8. Add salt and pepper to taste. Cook for another 2 minutes. Make sure to combine all ingredients.

  9. Serve and enjoy!
