I wanted a quick cook and I have an egg noodle pack from our Christmas basket. So I needed a dish to use with it… and tada, Lo Mien! It’s a quick stir fry but it took a little bit of time for me to prep.
I had a hard time cooking the noodles using the package instructions. I don’t know if it’s my oven not heating up or something. Nevertheless, finally able to cook it after quite awhile. So not a quick cook for me but I’m sure it’ll be quick from your side. The original recipe asked for white mushroom, I substituted it with Shitake and it still tasted nice.
Lo Mien
Ingredients
- 3 Tbsp vegetable oil
- 1 Piece white/yellow onion sliced
- 1 Piece red bell pepper julienned
- 1 Cup shitake mushrooms sliced
- 1 Pack snow peas cleaned
- 1 Piece carrot julienned
- 200 Grams egg noodles cooked according to package instructions
- 3 Tbsp soy sauce
- 1/2 Cup chicken stock
- 2 Tbsp oyster sauce
- 1 Bunch spinach chopped
- salt to taste
- pepper to taste
Instructions

In a wok, heat oil over medium heat.

Add onions, bell pepper, mushrooms, snow peas and carrots. Saute until onions are translucent and carrots are softer in texture.

Add cooked egg noodles. Mix with rest of ingredients and sauté for another 3 minutes.

Add soy sauce, chicken stock and oyster sauce. Cook for another 5 minutes.

Add spinach, salt and pepper. Combine with rest of ingredients. Cook for another 3 minutes.
