I had some leftover purple corn in the fridge so I tried to find a recipe I can cook it with.. so here goes, Beans Italiano. As the name implies, it’s heavily inspired by Italy. Though I don’t really know coz I only attribute Pizza to Italy, haha! Anyhow, I got the recipe from a Filipino website. It’s an easy cook. A great vegetable dish to couple with rice.
The first thing to do is to blanch the green beans then cook the rest of the ingredients in a wok. The recipe says to pour the meat sauce over the blanched green beans. What I did though is to add the green beans at the last step and sauté them together for 1 minute. I believe the effect is still the same for this Beans Italiano dish.
Beans Italiano
Ingredients
- 500 Grams green beans sliced into half
- 2 Tbsp vegetable oil
- 1 Piece onion minced
- 400 Grams ground pork
- 70 Grams tomato paste
- 2 Cups whole kernel corn
- 3/4 Tsp salt
- 1/2 Tsp black pepper
- 1 Cup water
Instructions

Blanch green beans in boiling salted water for 1 minute.

Drain green beans and place in ice cold water. Drain, let try and set aside.

In a wok, heat oil over medium heat.

Add onions, ground pork and tomato paste. Cook for 3 minutes.

Add corn kernels, salt, pepper and water. Mix all ingredients together. Bring to a boil then simmer for 20 minutes.

Add green beans and quickly sauté all ingredients together. Remove from wok and serve. Enjoy!
