I never handled lemongrass but I’ve always wanted to try Thai dishes. So one day, I finally took the plunged and watched some videos how to use lemongrass and I cooked this super successful Spicy Sotanghon Chicken Soup.
After cooking this super yummy Thai chicken soup, I now have another cuisine I want to try cooking more apart from Korean – Thai! I started stocking up on Thai ingredients such as Tom yum paste, curry paste and more. I’m so excited to cook some more considering how flavorful this Spicy Sotanghon Chicken Soup is!
Spicy Sotanghon Chicken Soup
Ingredients
- 4 Cloves garlic
- 1 Piece onion chopped
- 2 Thumbs ginger sliced
- 2 Stalks lemongrass chopped
- 8 Pieces Thai chili peppers sliced
- 2 Tbsp olive oil
- 3/4 Kilo chicken thigh sliced in half
- 4 Cups water
- 1 Piece chicken cube
- 2 Ounces sotanghon
- 1/2 Cup green onions chopped
- 1 Tbsp fish sauce
- 1/4 Tsp ground white pepper

In a food processor, combine garlic, onion, ginger, lemongrass and Thai chili

In a pot, place oil over medium-high heat. Add the spice mixture and sauté.

add chicken and sauté for a couple of more minutes until chicken are cooked.

add water. Let boil.

Add chicken cube, mix with the rest of ingredients and cover the pot. Lower heat and simmer for 30 minutes.

Add sotanghon and cook for 3 more minutes.

Add green onions, fish sauce and white pepper. Combine ingredients.

Serve in bowls and enjoy!
