Beef and Radish Soup

I wanted to try a Korean soup without Kimchi. Glad I found the Beef and Radish Soup recipe from the Maangchi website. It was simple to cook and feel very healthy because of the Korean radish that is in it. I made double serving of this as I intended to enjoy this for the whole week.

Luckily, it was a success! I love that I can get to enjoy this version of Beef soup. The radish is really the star here and it was great! I loved how much soup it has and it was flavorful!

Beef and Radish Soup

Servings 6

Ingredients

  • 500 grams Korean radish peeled and chopped
  • 14 cups water
  • 500 grams beef brisket cut into small pieces
  • 8 cloves garlic minced
  • 2 tbsp fish sauce
  • 2 tsp salt
  • 4 stalks green onions chopped

Instructions

  1. In a big pot, add Korean radish and water.

  2. Cover the pot and bring to a boil and cook for 15 minutes.

  3. Add beef brisket and garlic. Turn heat into medium and cook for another 20 minutes.

  4. Add fish sauce, salt and green onions. Cook for another 5 minutes.

  5. Serve into individual bowls. Enjoy!
