So I still have lots of food in the refrigerator so have to prepare a snack for today. It’s my favorite, boiled peanuts! When I was young, I used to buy one small plastic of it from roaming street vendors. It’s addicting to eat plus it’s healthy!
It doesn’t take much effort to cook this but you do have to leave it simmering for 4 hours. I cooked 1 kilo worth of peanuts so I can take this as a snack for 3 days. I love munching on something while working so having the boiled peanuts ready is perfect! I stored the remaining cooked peanuts in the refrigerator so I can still enjoy them the next few days.
Boiled Peanuts
Ingredients
- 1 kilo raw shelled peanuts
- 10 cups water
- 6 tbsp rock salt
Instructions

Rinse peanuts and strain.

In a large pot, add water and salt.

Mix the salt and water until salt is fully dissolved.

Add peanuts.

Bring to a boil.

Bring down to a simmar for 4 hours.

Remove peanuts from pot and strain.

Serve and enjoy!
