Ampalaya Guisado

Ingredients

  • 4 tbsp olive oil
  • 2 pieces onions minced
  • 6 cloves garlic minced
  • 1/4 kilo ground pork
  • 3/4 cup water
  • 200 grams tomato sauce
  • 1 piece ampalaya cut into squares
  • 2 pieces tokwa cut into 1-inch cubes
  • 2 tbsp salted black beans
  • 2 pieces eggs beaten

Instructions

  1. In a wok, heat oil over medium heat.

  2. Cook tofu until golden brown in color. Set aside.

  3. In the same wok with the remaining oil, add onions and garlic. Saute until onions turn translucent in color.

  4. Add ground pork. Cook until pork turns light brown in color.

  5. Add water, tomato sauce, ampalaya and cooked tofu.

  6. Cover and simmer for 5 minutes.

  7. Add black beans and egg. Mix well and simmer for another 2 minutes.

  8. Serve and enjoy!
