Mapo Tofu

Ingredients

  • 1/4 cup vegetable oil
  • 1 1/2 tbsp sichuan peppercorns
  • 3 tbsp ginger minced
  • 3 tbsp garlic minced
  • 250 grams ground pork
  • 2 tbsp spicy bean sauce
  • 2/3 cups water
  • 1 package soft tofu cut into cubes
  • corn starch mixture 1/4 cup water + 1 1/2 teaspoons corn starch and mix well.
  • 1/4 cup chili oil
  • 1 stalk scallion chopped

Instructions

  1. Heat oil over medium heat in a wok.

  2. Add sichuan peppercorns and fry for 3 minutes.

  3. Add ginger and mix with sichuan peppercorns.

  4. Add garlic and mix with ginger and sichuan peppercorns. Fry for another 3 minutes.

  5. Add ground pork and cook until color turns light brown.

  6. Add spicy bean sauce to the mixture. Mix well.

  7. Add 2/3 cups of water and mix with the rest of the ingredients.

  8. Add the corn starch mixture. Again, mix with the rest of the ingredients.

  9. Add chili oil. Stir into the sauce mixture.

  10. Add tofu and gently toss into the sauce.

  11. Cook for 5 minutes.

  12. Add scallions and stir with the tofu & sauce.

  13. Serve and enjoy!
