Cut melon in half.
Using a spoon, scrape off the middle part where the seeds and pulp are. Place on a bowl.
Put one cup of water on the bowl with melon seeds & pulp. Stir and mash very well to extract the flavor of the melon.
Then strain the juice and discard the rest.
Using a melon scraper, scrape all the flesh from the melon.
Separately, in a sauce pan, cook simple syrup by boiling 1 cup water and sugar. Then set aside to cool down.
In a pitcher, add the melon strands, juice (from the pulp & seeds), simple syrup and water. Stir well.
Serve the melon juice with lots of ice cubes. Enjoy!
