Earlier I cooked Chicken Sotanghon Soup with tons of veggies. This time, I’m cooking the same Chicken Sotanghon Soup with Malunggay and Sayote. It’s the same kind of effort as the earlier chicken sotanghon soup but just different veggies included. The taste? Same too though I prefer this one as the Malunggay leaves gave this soup a pop of color.
The sayote gave the soup a nice texture as well. So this wins the Chicken Sotanghon Soup series!
Chicken Sotanghon Soup with Malunggay and Sayote
Ingredients
- 8 Cups water
- 1/2 Kilo Chicken breast
- 3 Tbsp olive oil
- 8 Cloves garlic minced
- 1 Piece onion chopped
- 1 Piece sayote sliced
- 1 Piece chicken cube
- 1.3 Ounce sotanghon
- 1.5 Cups Malunggay leaves
- fish sauce to taste
- black pepper to taste
Instructions

In a pot, add chicken. Cover the pot and let boil for 15 minutes.

Remove chicken from pot and let it cool down. Keep chicken stock and set aside.

Remove chicken meat from bones and shred by hand. Set aside.

In the same pot, heat oil.

Add garlic and sauté for 1 minute. Add onion and sauté until onions are cooked.

Add sayote and cook for another 2 minutes.

Add shredded chicken and chicken stock back into the pot.

cover the pot and let boil.

Add chicken cube and stir with the rest of the ingredients.

Add sotanghon and cook until noodles are ready.

Add Malunggay leaves and cook for another minute. Season with fish sauce & black pepper. Combine ingredients together.

Serve in bowls and enjoy!
