Kimchi Soup with Glass Noodles

As I was finding recipes for ground pork, I came across this recipe: Kimchi Soup with Glass Noodles. It looked easy to prepare and there are only a few ingredients. I only had glass noodles missing in the pantry so I went to the grocery and found that the 80g Korean vermicelli is perfect for this recipe.

It didn’t take long to cook plus the serving size is perfect for me. The only oil used in this recipe is sesame oil which is aromatic at best. I thoroughly enjoyed this soup, it’s so flavorful and it’s perfect to eat while watching Korean series. Best eaten immediately after cooking 🥘

Kimchi Soup with Glass Noodles

Servings 2 People

Ingredients

  • 1 Tbsp sesame oil
  • 200 Grams ground pork
  • 1 Tsp minced garlic
  • 1 Tbsp sake
  • 1/3 Cup kimchi
  • 2 Cups chicken stock
  • 1 Cup water
  • salt to taste
  • pepper to taste
  • 80 Grams Korean vermicelli
  • 2 Pieces eggs whisked
  • 1 Tsp sesame seeds
  • 3 Stalks spring onions chopped

Instructions

  1. In a pot, heat sesame oil over medium heat.

  2. Add ground pork and cook till light brown in color. Break the pork apart.

  3. Add minced garlic and sake. Mix with rest of ingredients.

  4. Add kimchi and cook for another minute.

  5. Add chicken stock and water. Let boil.

  6. Add salt and pepper to taste then lower heat to medium-low.

  7. Add vermicelli and stir with rest of ingredients. Cook for another 7-8 minutes.

  8. Carefully drizzle whisked eggs into the pot. Let cook and do not stir or mix. Cook for another minute,

  9. Serve into bowls. Sprinkle with sesame seeds & green onions. Enjoy!
