A few weeks back, I ate Chopsuey through food delivery. I thoroughly enjoyed it so I made a mental note to cook one for myself in the next few days. And that day is today, I cooked Chopsuey. Definitely, super fulfilling as I get to do what I wanted to do. And this tasted so good! Especially because I know I’m eating healthy food. This will help me a lot in my health goal 😊

There is a lot of prep work to do. In the end though, it’s super worth it! I used frozen broccolis versus the fresh one coz the fresh one is sooo expensive! There is no difference though, this Chopsuey still tasted as good no matter which type I used.

Chopsuey

Servings 4 People

Ingredients

  • 3 Tbsp vegetable oil
  • 14 Pieces shrimp peeled and deveined
  • 1 Piece onion sliced
  • 1 Piece red bell pepper chopped into cubes
  • 1 Piece green bell pepper chopped into cubes
  • 2.5 Cups broccoli florets
  • 1 Pack snow peas cleaned
  • 200 Grams young corn chopped
  • 1/2 piece Big-sized cabbage chopped
  • salt to taste
  • pepper to taste
  • 1 Cup chicken broth
  • 2 Tsp cornstarch

Instructions

  1. In a wok, heat oil over high heat.

  2. Add shrimps and cook very quickly on each side. This should only take a minute. Remove shrimps from wok and set aside.

  3. Using remaining oil (add more oil as needed), sauté onions until translucent.

  4. Add bell peppers, broccoli florets, snow peas and young corn. Saute for about 5 minutes.

  5. Add cabbage and sauté for 2 more minutes.

  6. Add shrimps back to the wok. Season with salt and pepper. Mix well and sauté for another minute.

  7. Combine chicken broth and cornstarch. Mix super well until cornstarch is well-incorporated. Add to the wok.

  8. Mix all ingredients well and cook for another 2 minutes. This will thicken the sauce a lil.

  9. Remove from wok and place in a serving plate/bowl. Enjoy!
