It’s pretty obvious that I tend to cook dishes with ground meat in it. I guess it’s just easier to cook them. I do feel there are tons of ways to cook them that I haven’t tried yet. So here’s another one: Spicy Menudillo.
Spicy, flavorful and super easy to cook! Who would have thought that apart from the usual pork menudo, the ground pork version is also as good? I enjoyed this spicy menudillo very much! I think I only had this for 2 meals only.
Spicy Menudillo
Ingredients
- 2 tbsp olive oil
- 1 piece onion minced
- 4 cloves garlic minced
- 1/4 kilo ground pork
- 200 grams tomato sauce
- 1 cup water
- 1 piece potato diced
- 1 piece carrot diced
- 1/2 tsp black pepper
- 3 tbsp soy sauce
- 1 piece bay leaf
- 2 pieces green finger chilies chopped
Instructions

In a wok, heat oil over medium heat.

Add onions, garlic and pork. Cook until pork is light brown in color.

Add tomato sauce, water, potatoes and carrots. Simmer for 10 minutes.

Add pepper, soy sauce, bay leaf and green finger chilies.

Simmer for another 3 minutes.
