One of my weaknesses is KFC chicken. I just cannot resist it as it’s so yummy! When they had a promo of free 2 piece chicken for every 6 piece chicken order, I immediately ordered one. And I ended up with so many chicken leftover. So I researched in the internet and found that there’s one popular recipe where people cook rice with leftover KFC chicken. It’s called KFC Chicken Rice.
The usual recipe involves the rice, KFC chicken, chicken stock and soy sauce. I added a couple more ingredients such as leeks, garlic clove and a lil sesame oil. This dish was a success but I felt it was yummy when it was newly cooked, not so much the next few days. But still a good chicken fried rice nevertheless.
KFC Chicken Rice
Ingredients
- 2 cups rice washed
- 2 cups chicken stock
- 1 tbsp soy sauce
- 1 piece garlic clove crushed
- 2 stalks leeks
- 4 pieces KFC original-style chicken
- salt to taste
- pepper to taste
Instructions

Place rice and chicken stock inside the rice cooker.

Add soy sauce, garlic and leeks.

Add the leftover KFC original-style fried chicken

Cook the rice as you usually do.

Once rice is cooked in the rice cooker, remove chicken.

Shred the chicken with a fork, leaving only the chicken meat.

Add chicken meat back into the rice cooker.

Mix all ingredients thoroughly. Season with salt & pepper.

Serve and enjoy!
