I usually cook 4 cups a week so I get newly cooked rice on the 1st day and just reheat the rest of the week. So to keep things exciting, I tried to look for fried rice recipes. I’ve always been amazed by vegetable fried rice so this time, I cooked Bok Choy Fried Rice.
Overall, Bok Choy Fried Rice is a good dish. I think I might have overcooked the Bok Choy but still yummy, nevertheless.
Bok Choy Fried Rice
Inspired by Pepper Bowl
Servings 2 people
Ingredients
- 1 bunch Bok Choy washed & chopped
- 2 tbsp olive oil
- 1 tsp sesame seeds
- 6 cloves garlic minced
- 2 cups cooked leftover rice
- salt to taste
Instructions

Heat olive oil in a wok.

Add sesame seeds and garlic until aromatic.

Add Bok Choy and continue to saute in high heat for 3-5 minutes.

Add cooked rice and salt and cook until ingredients are well-blended.

Serve and enjoy!
