XO46 Culinary Elite Series at Maya Kitchen

It is such an honour to get an invite to a kitchen demo at the Maya Kitchen.  It was my first time and I was too excited!  This year, my main goal is to be able to practice cooking & baking so that I can be a better cook & baker.  That’s why I really appreciate the chance to learn new recipes and cooking techniques.

The Demo at Maya Kitchen is part of the Culinary Elite Series this 2015.  Yesterday, the featured restaurant is XO46 Heritage Bistro.

XO46 Heritage Bistro is a Filipino restaurant with branches at Valero Street, Makati, Century Mall & Capital Commons.  The name XO46 came from “extraordinary” and the year that the United States relinquished its sovereignty over the Philippines and recognised the country’s independence.  Basically, what XO46 does is to celebrate the historical event by featuring Pinoy dishes with a unique twist.

Yesterday, the executive chef at XO46 Heritage Bistro demonstrated 6 Filipino dishes to us.  

I loved being able to see the demo in person!  What I usually do before is that I watch cooking videos on YouTube then I follow the recipe at home.  The difference with being able to attend the demo is that apart from learning the yummy recipes, I’ll be able to taste the dish as well.  So the risk is lower (with regards to cooking a satisfying dish) as I can choose which recipes to adapt since I know which ones are delicious.

In the ff. dishes that were demonstrated yesterday, there are three dishes that I plan to adapt.  I will post them soon!

  • Sisig Fajitas – classic sisig wrapped in tortilla wrapper with fresh greens & kesong puti.

  • Adobo Rice – classic fried rice with crispy adobo flakes & sauce.

  • Pateros Express – an XO46 original dish of mixed sautéed seafood in salted egg sauce.

  • Halang-halang – a Visayan staple of chicken with coconut milk & turmeric.  This is my favourite among all the 6 dishes! <3

  • Humba – a Visayan staple dish of stewed pork in soy sauce, vinegar and sugar.

  • Peanut Butter Turon with Salted Caramel and Ice Cream – Banana peanut butter turon with salted caramel and ice cream.  The recommended ice cream to use is cheese ice cream 🙂

After the demo, we had all the demonstrated dishes for lunch.  The dishes were yummy!  I especially liked the Halang-halang & the pateros express.  I will surely adapt the recipes soon.
